Whole bunch cold maceration at 8ºC for at least 24 hours.

Pressing and natural racking

Fermentation in 500 and 225 litres French oak barrels.

Lees contact and “batonnage”.

Limited production: 6.542 bottles

Best served between 6 and 8º.

Alcohol: 13º.

Total acidity: 5.7 g/l

TASTING NOTES

Pale straw yellow colour. Translucent, clean and bright.

Fragrant and delicate, with aromas of white peach, camomile, jasmine, white roses, aromatic herbs (thyme, marjoram), honey, mineral and balsamic. It has a smoky and toasted note at the end that makes it unique.

A gastronomic white wine designed to be enjoyed slowly and which promises great ageing potential.
